
These might be the easiest and most delicious bars ever! I make these for dessert or for snacking. They can be filled with any jam or even cinnamon sugar filling for a warm twist. Give this recipe a try!
Jam bars
2 cups chickpea flour
1 cup earth balance butter
1/2 cup cane sugar
1/2 tsp sea salt
1 (12-18oz) jar of jam
Preheat your oven to 350 degrees. Line a 9×9″ pan with parchment paper.
In a food processor, pulse together the chickpea flour, earth balance butter, sugar and salt. Set aside one cup of the dough for the topping. Press the remaining dough into the bottom of the pan and bake for 18 minutes or golden brown.
Spread the jam over the baked crust. Sprinkle the reserved dough on the top of the jam. Bake for 30 minutes or until golden brown. Cool completely before cutting. Pull the bars out of the pan using the parchment and cut into 16 bars. Store in an air tight container for up to a week.
